Tropical Chia Pudding

INGREDIENTS

1/4 C white chia

1 can full fat coconut milk

3 oz unsweetened almond milk

1 ripe banana, mashed

2 T brown sugar

1/2 t rum extract

1/2 t coconut extract

1/2 t allspice

1/2 C coconut

DIRECTIONS

Mash banana in a bowl. Add in the coconut milk, almond milk, brown sugar, extracts and allspice. Add chia. Mix all ingredients, dispersing the chia. Refrigerate at least 2 hours to allow ingredients to meld into a pudding.Periodically check on the mixture while chilling and mix it up to insure all ingredients are equally dispersed in the mixture. Top with coconut.
